If you’ve never had stuffed peppers, you’re seriously missing out! I’ve never been a pepper fan, but I LA-LA-LOVE these! Aaron makes them really well, but I decided to give it a shot last night and it turned out so good! These are so easy and pretty quick to do!
1 lb ground beef
1 small can of sweet corn
1 small white onion
1 pouch of Uncle Ben’s wild rice
1 tsp paprika
2 tsp ground cumin
Salt and pepper to taste ( I did about 1/2 tsp of each)
4 peppers, any colors you’d like!
Taco blend shredded cheese
Brown your ground beef and add in the onion and corn. Mix in the papika, cumin, salt and pepper. Microwave your rice and add it in to the mix. You can use any rice you would like, but this is fast and easy and mixes well.
While I was mixing this together, Aaron cut the inside of the peppers. No pictures of this since I was busy! 🙂 When choosing peppers, make sure to get ones that will stand on their own so they don’t topple over! Wash them after and place a little bit of shredded cheese in the bottom! Add in your filling! We had some leftover, so we added it on the outsides.
Top with shredded cheese and bake at 350 degrees for 20 mins.
Delicious! You can add the tops of the peppers on if you’d like or top with sour cream, guacamole or even more cheese! Totally up to your preference!
